A cheese that finishes maturing in the recipient’s home. “Sei di Coccio” was created in Forlì, at the L’Antica Cascina dairy, based on an idea from 2023: following the floods that struck the Romagna region, a cheese covered in raw clay as a symbol of the area’s rebirth. The blend of cow’s and sheep’s milk matures beneath that crust of earth, and the covering is not merely decorative: inside the packaging are instructions on how to store it and how to decide whether to stop the maturing process or let it continue, month by month. It is a gift that engages the recipient and is memorable precisely for that reason.
